When I think of summers spent at my grandmother’s cottage, one thing comes to mind almost instantly—the Blueberry–Lemon Curd Tart cooling on the windowsill, its golden edges glistening in the afternoon light. It wasn’t just a dessert; it was a ritual. Each tart was filled with a sunny lemon curd, silky and tart, and crowned with the juiciest wild blueberries we picked ourselves earlier that morning.
This vibrant tart holds more than nostalgic value—it’s a celebration of contrasts. The buttery crunch of the crust plays against the smooth, citrusy filling, while the fresh burst of blueberries adds a juicy layer of complexity. Ingredients
- For the Crust:
- 1 ¼ cups all-purpose flour
- ⅓ cup powdered sugar
- ½ teaspoon salt
- ½ cup unsalted butter, cold and cubed
- 1–2 tablespoons ice water
- For the Lemon Curd:
- 3 large eggs
- ½ cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- ¾ cup granulated sugar
- 6 tablespoons unsalted butter, cubed
- For the Topping:
- 1 ½ cups fresh blueberries
- Optional: powdered sugar for dusting
- Optional: lemon zest curls or fresh mint for garnish
Instructions
- 1. Prepare the tart crust:
In a bowl, whisk together flour, powdered sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Add ice water, one tablespoon at a time, mixing just until the dough begins to come together. - Press the dough into a tart pan with a removable bottom, making sure it’s evenly distributed along the base and sides. Chill the crust in the refrigerator for at least 30 minutes.
- 2. Blind-bake the crust:
Preheat oven to 375°F (190°C). Line the chilled crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove weights and bake an additional 8–10 minutes until lightly golden. Let cool completely. - 3. Make the lemon curd:
In a saucepan, whisk together eggs, lemon juice, lemon zest, and sugar. Cook over medium-low heat, stirring constantly, until the mixture thickens (about 7–10 minutes). Remove from heat and whisk in butter until smooth. Strain through a fine mesh sieve for a silky finish. Let it cool slightly. - 4. Assemble the tart:
Pour the lemon curd into the cooled tart shell and smooth the top with a spatula. Chill in the refrigerator for at least 1–2 hours to set. - 5. Add the blueberries:
Once the curd has firmed up, top with fresh blueberries. You can neatly arrange them in concentric circles or scatter them for a rustic look. Add a light dusting of powdered sugar or a few curls of lemon zest before serving, if desired.
Notes
This tart is best served chilled and eaten the same day it’s assembled, though leftovers will hold well in the fridge for up to 3 days. The lemon curd can also be repurposed into other desserts, like parfaits, yogurt toppings, or even scones.
