Blueberry Thyme Chicken

  • Author: Adaline L.
  • Yield: 4 servings 1x

Description

Every so often, a recipe comes along that surprises the palate with its perfect balance of sweet and savory. Blueberry Thyme Chicken is one of those dishes. Juicy, golden-seared chicken is paired with a glossy blueberry-thyme sauce that feels both rustic and elegant. The natural sweetness of blueberries mingles with aromatic thyme, creating a sauce that’s tangy, herbaceous, and deeply comforting.

This dish has the charm of something you might find at a countryside bistro, where seasonal berries are celebrated and simple ingredients are transformed into something memorable. It’s a wonderful way to use summer blueberries, though frozen ones work beautifully too, making this meal enjoyable year-round. Whether you’re cooking for a weeknight dinner or hosting friends, Blueberry Thyme Chicken brings a burst of flavor that feels special without being complicated.

Ingredients

Scale
  • For the Chicken:
  • 4 boneless, skinless chicken breasts (or thighs)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • For the Blueberry Thyme Sauce:
  • 1 ½ cups fresh or frozen blueberries
  • 2 tbsp honey (or maple syrup)
  • 2 tbsp balsamic vinegar
  • ½ cup chicken broth
  • 1 tsp fresh thyme leaves (plus extra for garnish)
  • Pinch of salt

Instructions

  • Cook the Chicken:
Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove from pan and set aside.
  • Make the Sauce:
In the same skillet, sauté garlic until fragrant. Add blueberries, honey, balsamic vinegar, chicken broth, thyme, and a pinch of salt. Simmer for 6–8 minutes until the blueberries burst and the sauce thickens slightly.
  • Combine:
Return the chicken to the skillet, spooning the sauce over the top. Simmer for 2–3 more minutes to let the flavors meld.
  • Serve:
Plate the chicken with extra sauce drizzled on top. Garnish with fresh thyme sprigs. Serve with mashed potatoes, rice, or roasted vegetables.

Notes

This dish pairs beautifully with creamy sides like mashed potatoes or polenta. It’s also delicious served over wild rice or quinoa for a healthier touch.
