8 oz beef breakfast sausage

1/2 cup diced bell pepper

1 cup shredded cheddar cheese

8 egg roll wrappers

Instructions
Heat olive oil in a skillet over medium heat. Add the diced onion and bell pepper, cooking until soft and fragrant. Add the beef sausage and cook until fully browned, breaking it into small crumbles as it cooks.
In a bowl, whisk the eggs with salt and black pepper. Lower the heat and pour the eggs into the skillet. Gently stir until the eggs are just set and soft. Remove from heat and let the mixture cool slightly, then stir in the shredded cheese.
Lay an egg roll wrapper on a clean surface. Spoon a portion of the filling into the center, fold in the sides, and roll tightly. Seal the edge with a little water. Cook the egg rolls in a lightly oiled skillet or air fryer until golden and crisp on all sides. Serve warm.
