Description
Few meals bring as much joy to the table as a warm platter of tender, juicy Carnitas made in the Crockpot. Whether you’re hosting taco night or looking for a meal prep hero, carnitas are a crowd-pleasing classic rooted in Mexican culinary tradition. These savory shredded bites are slow-cooked until melt-in-your-mouth tender, then crisped slightly for texture—a comforting contrast that makes every bite exciting.
Traditionally, carnitas were a labor of love, simmered in large pots for hours in the heart of the kitchen. I remember visiting a small family-run taquería in central Mexico years ago, where carnitas were prepared every Saturday morning. The smell of seasoned pork cooking with citrus and spices drifted out into the street, drawing a line before the doors even opened. It’s a memory that stuck with me—the warm tortillas, fresh salsas, and rich meat with that magical crispy edge.
This Crockpot version channels all that traditional flavor but with a much simpler process. It uses accessible ingredients, minimal prep, and lets the slow cooker do all the hard work. Whether you’re stuffing tacos, topping rice bowls, or layering nachos, this recipe makes it easy to enjoy the bold, authentic taste of carnitas without spending all day in the kitchen
Ingredients
-
3–4 pounds boneless lamb shoulder or beef chuck roast
-
1 tablespoon olive oil
-
1 tablespoon salt
-
1 teaspoon black pepper
-
1 tablespoon ground cumin
-
1 tablespoon chili powder
-
1 teaspoon smoked paprika
-
1 teaspoon garlic powder
-
1 teaspoon onion powder
-
1/2 teaspoon dried oregano
-
2 bay leaves
-
4 cloves garlic, minced
-
1 onion, quartered
-
1 orange, juiced (save the spent halves)
-
1 lime, juiced
-
1/2 cup low-sodium chicken broth
Instructions
Step 1: Season the meat
Rub the lamb or beef roast with olive oil, salt, pepper, cumin, chili powder, paprika, garlic powder, onion powder, and oregano. Make sure every inch is well coated for maximum flavor.
Step 2: Load up the Crockpot
Place the seasoned meat in the Crockpot. Add the bay leaves, minced garlic, and quartered onion around the meat. Pour in the orange juice and lime juice, then tuck in the squeezed orange halves. Add the chicken broth last.
Step 3: Slow cook to perfection
Cover and cook on low for 8–10 hours or high for 5–6 hours, until the meat is fall-apart tender and shreds easily with a fork.
Step 4: Shred the meat
Remove the meat from the slow cooker and place it on a large cutting board. Shred it using two forks, discarding any large pieces of fat.
Step 5: Crisp it up (optional but delicious)
To get those iconic crispy edges, spread the shredded meat on a baking sheet lined with foil. Broil on high for 4–5 minutes, stir, then broil again for another 4–5 minutes until the edges are slightly crisped and golden.
Step 6: Serve and enjoy
Serve the carnitas hot in warm tortillas with chopped onion, cilantro, lime wedges, and your favorite salsa. Or use it for burrito bowls, enchiladas, or taco salads.
Notes
To make this dish even more authentic, you can finish the carnitas in a cast-iron skillet with a splash of the juices to crisp up the edges. If you’re skipping citrus for dietary reasons, a splash of apple juice can be a good substitute.
