Ingredients
- 1 (15 oz) can chickpeas, drained and rinsed
- 1 large avocado, diced
- 1/2 cup feta cheese, crumbled
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, finely chopped
- 2 tablespoons olive oil
- Juice of 1 lemon
- 1 garlic clove, minced
- Salt and pepper, to taste
- 1 tablespoon fresh parsley or cilantro, chopped (optional)
Instructions
- Step 1: Make the Dressing
In a small bowl or jar, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper. Let it sit while you prep the rest of the salad. This allows the flavors to meld and the garlic to mellow. - Step 2: Prep the Veggies
Dice the avocado, halve the cherry tomatoes, chop the cucumber and red onion. Make sure everything is cut into bite-sized pieces for the perfect forkful. - Step 3: Mix the Base
In a large salad bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, and crumbled feta. Toss gently. - Step 4: Add the Avocado Last
Add in the diced avocado and pour the dressing over the top. Carefully toss to combine, being gentle with the avocado so it doesn’t turn mushy. - Step 5: Finish and Serve
