Description

On chilly evenings growing up, the aroma of sizzling beef and caramelized onions would drift through the house long before dinner hit the table. My mother’s Chinese Beef and Onion Stir Fry was always the kind of dish that made everyone pause, inhale deeply, and smile. This dish is a cherished weeknight favorite in many homes—rich, savory, comforting, and so simple to prepare.

Originating from Chinese home cooking traditions, this stir fry isn’t flashy, but it packs a powerful flavor punch. It’s the kind of recipe passed down through generations, adapted with local ingredients, and cooked with care. A hot wok, a handful of pantry staples, and a few fresh aromatics are all you need to recreate this beloved classic.

Whether you’re trying to recreate the magic of your favorite takeout or looking to introduce bold flavors into your home kitchen, Chinese Beef and Onion Stir Fry is the dish that delivers—every single time.

Ingredients

Scale
  • For the Beef Marinade:
  • 1 lb (450 g) flank steak or sirloin, thinly sliced against the grain
  • 1 tablespoon light soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 1/2 teaspoon baking soda
  • For the Sauce:
  • 2 tablespoons oyster sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon light soy sauce
  • 1 teaspoon sugar
  • 1/4 cup beef broth or water
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)
  • For the Stir Fry:
  • 2 tablespoons neutral oil (like canola or sunflower)
  • 2 large yellow onions, thinly sliced
  • 3 garlic cloves, minced
  • 1-inch piece of fresh ginger, finely chopped
  • 2 green onions, chopped (for garnish)
  • Steamed jasmine rice, for serving

Instructions

  • Step 1: Marinate the Beef
Toss your thin beef slices in a bowl with soy sauce, cornstarch, sesame oil, and baking soda. Let it marinate for 15–30 minutes. The baking soda helps tenderize the meat for that classic Chinese-restaurant texture.
  • Step 2: Mix the Sauce
Combine oyster sauce, dark and light soy sauces, sugar, and beef broth. Add the cornstarch slurry and whisk until smooth. Set aside.
  • Step 3: Sear the Beef
Heat 1 tablespoon of oil in a hot wok or large skillet. Add beef in a single layer and sear for 1–2 minutes per side, just until browned. Don’t overcrowd the pan—work in batches if needed. Remove and set aside.
  • Step 4: Sauté the Onions and Aromatics
Add the remaining oil to the pan. Stir-fry onions for about 4 minutes, until they soften and begin to brown. Stir in garlic and ginger, cooking for another 30 seconds until fragrant.
  • Step 5: Combine and Finish
Return the beef to the pan. Pour in the prepared sauce and toss everything together. Let it bubble for 2–3 minutes, until the sauce thickens and coats the beef and onions evenly.
  • Step 6: Serve and Enjoy
Serve hot over a bowl of fluffy steamed rice. Garnish with green onions for a pop of color and freshness.

Notes

  • Add veggies like bell peppers or snap peas for extra crunch.
  • Adjust soy sauce levels to control saltiness.
