Birthdays, anniversaries, even quiet Sunday dinners often ended with a silky, rich cheesecake — usually my mother’s classic New York-style. But one Valentine’s Day, years ago, I decided to create a version that felt like a love letter of its own. That’s how Chocolate Strawberry Swirl Cheesecake came to be — a velvety, chocolate-infused cheesecake with ribbons of fresh strawberry puree, resting on a crisp chocolate cookie crust.

This cheesecake feels like romance in dessert form. It’s a showstopper at dinner parties, a thoughtful gesture for a loved one, or just a little indulgence for yourself. The deep richness of the chocolate balances beautifully with the bright tang of strawberries, and the swirl pattern makes every slice a work of art. It’s sophisticated, nostalgic, and comforting — all in one.

 

The combination of chocolate and strawberry has long been celebrated, especially around holidays like Valentine’s Day and Mother’s Day. But this cheesecake turns that beloved flavor duo into something elevated — yet approachable enough for beginner bakers.

  • For the crust:
  • 1 1/2 cups chocolate cookie crumbs (like Oreo, without filling)
  • 1/4 cup unsalted butter, melted
  • For the strawberry swirl:
  • 1 1/4 cups fresh strawberries, chopped
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • 2 teaspoons cornstarch
  • For the chocolate cheesecake filling:
  • 24 oz (3 blocks) cream cheese, softened
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 8 oz dark or semisweet chocolate, melted and cooled
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

Instructions

  • Step 1: Prepare the Crust
    Preheat your oven to 325°F (163°C). In a mixing bowl, combine the chocolate cookie crumbs with melted butter. Press the mixture into the bottom of a 9-inch springform pan. Use the bottom of a measuring cup to press it in firmly and evenly. Bake for 8–10 minutes, then let cool while you prepare the filling.
  • Step 2: Make the Strawberry Swirl
    In a small saucepan over medium heat, combine strawberries, sugar, and lemon juice. Cook until strawberries release their juices and break down, about 5–6 minutes. Stir in cornstarch and simmer for 1–2 more minutes, until thickened. Blend into a smooth puree, then set aside to cool.
  • Step 3: Prepare the Cheesecake Filling
    In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the sour cream, heavy cream, vanilla extract, and flour, mixing until just combined. Gently beat in the melted chocolate.
  • Step 4: Add the Eggs
    Add eggs one at a time, mixing on low speed just until incorporated. Avoid overmixing — this helps prevent cracks.
  • Step 5: Assemble the Cheesecake
    Pour the chocolate cheesecake batter over the cooled crust. Drop spoonfuls of the strawberry puree on top. Use a knife or skewer to gently swirl the puree into the top layer of the batter. Be careful not to over-swirl — a few figure-8s will do.
  • Step 6: Bake in a Water Bath
    Wrap the outside of your springform pan in two layers of foil to prevent leaks. Place it in a large roasting pan and fill the pan with hot water until it reaches halfway up the sides of the cheesecake pan. Bake for 55–65 minutes, or until the center is set but still slightly jiggly.
  • Step 7: Cool and Chill
    Turn off the oven and crack the door. Let the cheesecake cool in the oven for 1 hour. Then remove it and cool to room temperature. Refrigerate for at least 6 hours or overnight for the best texture.
  • Step 8: Serve and Savor
    Once chilled, carefully remove the springform ring. Slice with a warm, clean knife and serve as-is or with extra strawberry sauce on the side.

Notes

This Chocolate Strawberry Swirl Cheesecake can be made up to 2 days in advance. The flavors develop beautifully as it chills. Garnish with fresh strawberries or chocolate shavings just before serving for an elegant finish.
