Someone would always stand by the stove, stirring eggs while tortillas warmed on the side, and everyone customized their own wrap. This Chorizo Breakfast Burrito carries that same spirit. It’s filling, satisfying, and made to be shared, whether you’re feeding a family or prepping breakfasts for the week ahead.

  • 8 large eggs

  • 8 oz beef chorizo

  • 1 tablespoon olive oil

  • 1/2 cup diced onion

  • 1/2 cup diced bell pepper

  • 1 cup shredded cheddar or Mexican-blend cheese

  • 4 large flour tortillas

  • Salt, to taste

  • Black pepper, to taste


Instructions

Start by heating olive oil in a skillet over medium heat. Add the diced onion and bell pepper, cooking until soft and fragrant. Stir in the beef chorizo, breaking it apart with a spoon as it cooks. Let it brown slightly so the spices bloom and release their aroma.

In a bowl, whisk the eggs with a pinch of salt and black pepper. Lower the heat and pour the eggs into the skillet with the chorizo mixture. Gently stir, cooking slowly until the eggs are just set and fluffy. Sprinkle in the shredded cheese and let it melt into the eggs.

 

Warm the tortillas in a dry pan or microwave until soft. Spoon the filling into the center of each tortilla, fold in the sides, and roll tightly into a burrito. Serve warm and enjoy every bite.

Notes

You can easily double this recipe for meal prep. Wrap burritos individually in foil and refrigerate or freeze for later.
