This recipe was born out of one of those “what’s-in-the-fridge” nights that somehow turn into something unforgettable. I had leftover cooked chicken, a package of gnocchi, and not much else. Ingredients
- 1 tablespoon olive oil
- 1/2 cup diced turkey bacon
- 2 cups cooked shredded chicken
- 1 (16-ounce) package shelf-stable potato gnocchi
- 4 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 1/4 cups low-sodium chicken broth
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried parsley
- Salt and pepper to taste
- 1/4 teaspoon crushed red pepper flakes (optional)
- 2 green onions, sliced (for garnish)
Instructions
- 1. Sauté the turkey bacon:
Heat the olive oil in a large skillet over medium heat. Add the diced turkey bacon and cook until crispy, about 4–5 minutes. Remove and set aside, leaving the flavorful drippings in the pan. - 2. Combine the base ingredients:
Add the shredded chicken, uncooked gnocchi, chicken broth, milk, cream cheese, garlic powder, onion powder, dried parsley, and crushed red pepper flakes (if using) to the skillet. Stir gently to combine. - 3. Simmer and cook:
Bring the mixture to a simmer. Cover and cook for about 5–7 minutes, stirring occasionally, until the gnocchi are tender and the sauce starts to thicken. - 4. Stir in the cheese:
Add the shredded cheddar cheese and cooked turkey bacon back into the skillet. Stir until the cheese is melted and the sauce is creamy and smooth. Taste and adjust seasoning with salt and pepper. - 5. Garnish and serve:

Notes
This dish thickens as it cools. If reheating, stir in a splash of broth or milk to loosen the sauce and revive the creaminess
