Every so often, a simple dish comes along that feels like it rewrites breakfast—and crispy feta fried eggs are exactly that. They’re bold, salty, crackly, and completely addictive. All it takes is a hot pan, a sprinkle of crumbled feta, and a couple of eggs, and suddenly, your breakfast is elevated from ordinary to unforgettable.
Ingredients

2 large eggs

1/4 cup crumbled feta cheese

1 tablespoon olive oil or butter

Freshly ground black pepper (to taste)

Optional toppings: chili flakes, fresh herbs, avocado, or hot sauce
Instructions
1. Preheat your skillet:
Place a nonstick or cast iron skillet over medium-high heat. Add olive oil or butter and let it heat until shimmering but not smoking.
2. Add the feta:
Sprinkle the crumbled feta in a rough circle or two small piles where you plan to crack the eggs. Let the cheese sizzle for about 30 seconds until it starts to melt and brown.
3. Crack in the eggs:
Carefully crack the eggs directly over the sizzling feta. Try to keep the yolks centered for even cooking. Lower the heat slightly.
4. Cook to your preference:
Let the eggs cook undisturbed for 2–3 minutes, until the whites are set and the feta forms golden, crispy edges. For runny yolks, remove the pan from heat now. For firmer yolks, cover the skillet for another 1–2 minutes.
5. Season and serve:
Sprinkle freshly ground black pepper over the top. Slide the eggs onto a plate or directly over toast, avocado, or sautéed greens. Add chili flakes, herbs, or hot sauce if you like some kick.
Notes
Crispy feta fried eggs are best eaten fresh, right out of the pan. That said, you can gently reheat them on low heat in a skillet for about 1–2 minutes.
