  • 34 pounds chuck roast or beef shoulder

  • 1 tablespoon olive oil

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 tablespoon garlic powder

  • 1 tablespoon onion powder

  • 1 tablespoon Worcestershire sauce

  • 4 cups low-sodium beef broth

  • 1 large yellow onion, thinly sliced

  • 6 hoagie rolls or crusty sandwich buns

  • 12 slices provolone or Swiss cheese

  • 2 tablespoons butter (for toasting rolls)


Instructions

Step 1: Sear the roast (optional, but recommended)
Start by heating the olive oil in a large skillet over medium-high heat. Season your beef roast generously with salt, pepper, garlic powder, and onion powder. Sear the roast on all sides until browned—this step adds incredible depth of flavor.

Step 2: Load the Crockpot
Transfer the seared roast into your slow cooker. Scatter the sliced onions over the top. Pour in the beef broth and Worcestershire sauce, making sure the meat is mostly submerged.

Step 3: Slow cook to perfection
Cover and cook on low for 8–10 hours or on high for 5–6 hours. You’ll know it’s ready when the beef shreds easily with a fork and your house smells like a cozy deli.

Step 4: Shred the beef
Once cooked, remove the beef and shred it into bite-sized pieces using two forks. Return the shredded beef to the Crockpot to keep it warm and soaked in the flavorful broth.

Step 5: Toast the rolls
Just before serving, preheat your oven to 375°F. Split your hoagie rolls and lightly butter the insides. Place them on a baking sheet and toast in the oven for about 5 minutes or until golden.

Step 6: Assemble the sandwiches
Pile the shredded beef onto each toasted roll. Add two slices of cheese per sandwich and return them to the oven just until the cheese melts, about 2–3 minutes.

 

Step 7: Serve with au jus
Ladle the hot cooking broth into small bowls for dipping and serve each sandwich with its own side of au jus. Dip, bite, and enjoy the magic.

Notes

You can use lamb roast instead of beef for a different spin. It will be just as tender and flavorful. For a lighter version, serve open-faced or with lettuce wraps instead of rolls.
