From the first delicate forkful, you’re transported to a world where desserts are more than sweet endings—they’re love letters in edible form. This decadent cake, known as Ptichye Moloko in Russian, is not just a dessert—it’s a celebration of memory, tradition, and the art of gentle indulgence.
Ingredients
Sponge Cake:

4 large eggs

Soufflé Layer:

1 cup unsalted butter, softened

1 cup granulated sugar

½ cup cold water (for blooming gelatin)

4 large egg whites

Chocolate Glaze:

½ cup semisweet chocolate chips or chopped chocolate

Instructions
Preheat your oven to 350°F (175°C). Grease and line the bottom of a springform pan (9-inch works well).
In a large mixing bowl, beat the eggs and sugar together until pale and fluffy—about 6-8 minutes. This step is crucial for getting that airy, light sponge.
Add in the vanilla extract. Then gently fold in the sifted flour and baking powder using a spatula, being careful not to deflate the batter.
Pour the mixture into your prepared pan and bake for 20–25 minutes, or until golden and springy to the touch. Let it cool completely in the pan.
In a small bowl, bloom the gelatin in ½ cup cold water for 10 minutes. Then stir in the hot water until fully dissolved.
In a large bowl, beat the softened butter with sugar and vanilla extract until creamy. This will form the rich base of your soufflé.
In a separate clean bowl, whisk egg whites with a pinch of salt until stiff peaks form. Carefully pour the gelatin mixture into the butter mixture, then gently fold in the egg whites. Do this in batches, keeping the mixture airy and light.
Pour the soufflé over the cooled sponge in the same springform pan. Smooth the top with a spatula. Chill in the fridge for at least 4 hours, or until fully set.
In a small saucepan, heat the cream until steaming but not boiling. Remove from heat and stir in the chocolate and butter until smooth and glossy.
Notes
This recipe contains raw egg whites. If preferred, use pasteurized egg whites or a stabilizing meringue powder.
