What makes them unique isn’t just the quality of the chocolate or the silkiness of the ice cream. It’s the subtle infusion of Middle Eastern flavors like cardamom, rose, or saffron that turn this simple dessert into something extraordinary. Think Belgian chocolate meets Arabian nights. These bars are luxurious, deeply satisfying, and truly unforgettable.

  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup sweetened condensed milk
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cardamom
  • Optional: 1 teaspoon rosewater or a pinch of saffron threads
  • For the Chocolate Coating:
  • 2 cups dark chocolate chips or chopped dark chocolate
  • 2 tablespoons coconut oil
  • Optional Toppings:
  • Crushed pistachios
  • Dried rose petals
  • Toasted sesame seeds
  • Flaky sea salt

Instructions

  • Step 1: Make the Ice Cream Base
    In a large bowl, whisk together the heavy cream, whole milk, sweetened condensed milk, honey, vanilla, and cardamom. If using rosewater or saffron, stir that in too. The mixture should be smooth and fragrant.
  • Step 2: Pour and Freeze
    Pour the mixture into silicone ice cream bar molds or popsicle molds. Tap lightly to remove air bubbles. Insert sticks and freeze for at least 6 hours or overnight until fully solid.
  • Step 3: Prepare the Chocolate Coating
    Melt the chocolate and coconut oil together in a heatproof bowl over simmering water (double boiler), or microwave in 30-second bursts, stirring until smooth. Let cool slightly to thicken for coating.
  • Step 4: Dip the Ice Cream Bars
    Remove bars from molds one at a time. Dip quickly into the melted chocolate and allow the excess to drip off. Place on a parchment-lined tray. Immediately sprinkle with crushed pistachios, rose petals, or sesame seeds before the chocolate sets.
  • Step 5: Freeze Again
    Return dipped bars to the freezer for 15–20 minutes to fully set the shell.
  • Step 6: Serve and Savor
    Serve straight from the freezer on a hot day and let the creamy, spiced center and crunchy shell transport you straight to Dubai.
