This variation isn’t just refreshing—it’s beautifully simple, hydrating, and a perfect celebration of seasonal produce.

This salad became a staple at my house during the height of summer when tomatoes were at their peak and cucumbers piled high at the farmers’ market. It was born out of necessity—an overload of cucumbers from my neighbor’s garden—and quickly became the dish I was asked to bring to every potluck. Light yet flavorful, it’s the kind of salad that pleases both those looking for freshness and those craving a bit of indulgence.

  • 2 cups cherry tomatoes, halved
  • 1 large cucumber, thinly sliced
  • 8 oz fresh mozzarella balls (bocconcini or ciliegine), halved
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • Salt and pepper, to taste

Instructions

  • Slice and Prep
    Begin by halving the cherry tomatoes and mozzarella balls. Slice the cucumber into thin rounds—use a mandoline if you have one for extra thinness and elegance.
  • Combine the Ingredients
    In a large serving bowl, gently toss the sliced cucumber, cherry tomatoes, and mozzarella together. The salad should already look vibrant and fresh.
  • Add Basil and Seasoning
    Tear fresh basil leaves by hand and sprinkle them generously over the bowl. Drizzle with olive oil and season with salt and freshly cracked black pepper.
  • Drizzle the Balsamic Glaze
    Just before serving, finish with a generous drizzle of balsamic glaze. This adds a rich, tangy-sweet note that elevates the dish.
  • Serve Immediately
    Serve the salad right away for the freshest flavor and best texture. It’s best enjoyed slightly chilled or at room temperature.
