  • 1 ½ pounds boneless, skinless chicken breasts (cut into bite-sized cubes)
  • Salt and black pepper, to taste
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 5 garlic cloves, minced
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
  • Juice of half a lemon (optional)

Instructions

  • 1. Season the chicken
    Start by patting your chicken dry with a paper towel—this helps the pieces brown nicely. In a medium bowl, toss the chicken cubes with salt, pepper, paprika, and onion powder until evenly coated.
  • 2. Sear the chicken
    Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken in a single layer. Don’t overcrowd the pan—work in batches if needed to get that golden crust.
  • Sear the chicken for about 4–5 minutes on one side without moving it, then flip and cook another 3–4 minutes until golden brown and cooked through. Remove the chicken to a plate and set aside.
  • 3. Make the garlic butter sauce
    Reduce the heat to medium-low. In the same skillet, add the butter and let it melt, scraping up any browned bits from the pan. Stir in the minced garlic and cook for about 30 seconds—just until fragrant. Be careful not to let it burn.
  • 4. Combine and finish
    Return the chicken bites to the skillet and toss them in the garlic butter sauce. Let everything simmer together for 1–2 minutes so the flavors really soak in. Finish with a squeeze of lemon juice and sprinkle with fresh parsley.

Notes

You can easily swap chicken breasts with boneless, skinless chicken thighs for a juicier result. This recipe is also great for doubling if you’re feeding a crowd or meal prepping for the week.
