Ingredients
-
2 boneless, skinless chicken breasts
-
4 slices turkey ham
-
4 slices Swiss or Gruyère cheese
-
Salt and black pepper, to taste
-
½ cup all-purpose flour
-
2 large eggs, beaten
-
1 cup breadcrumbs (preferably panko for extra crunch)
-
2 tablespoons olive oil
-
1 tablespoon butter
-
Optional: chopped fresh parsley or lemon wedges for garnish
Instructions
Step 1: Prepare the Chicken
Place the chicken breasts between two pieces of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound them to an even ¼-inch thickness. This ensures even cooking and easy rolling.
Step 2: Add the Filling
Season both sides of the chicken with salt and pepper. Lay 2 slices of turkey ham and 2 slices of cheese on each breast, keeping the filling centered. Fold in the sides slightly, then roll tightly into a log. Wrap each roll in plastic wrap and refrigerate for 15–20 minutes to help them hold their shape.
Step 3: Set Up the Breading Station
Prepare three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Carefully unwrap the chilled chicken rolls. Dredge each roll in flour, dip in egg, then coat thoroughly in breadcrumbs, pressing gently so they adhere.
Step 4: Pan-Fry to Golden Perfection
Heat olive oil and butter in a skillet over medium heat. Once hot, add the chicken and cook, turning gently, until golden brown on all sides—about 6–8 minutes total. You want a deep golden crust.
Step 5: Finish in the Oven
Transfer the browned chicken to a baking dish and bake at 375°F (190°C) for 12–15 minutes, or until the internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing.
Step 6: Serve and Enjoy
Slice the Chicken Cordon Bleu into thick rounds, revealing the gorgeous spiral of ham and melted cheese. Garnish with chopped parsley or a squeeze of lemon if desired, and serve with a crisp salad, roasted potatoes, or seasonal vegetables.
Notes
You can double the recipe for a larger crowd or freeze unbaked, breaded rolls for up to 1 month. Cook from frozen by baking slightly longer until the center is fully heated through.
