Hash brown bowls have become a staple in many homes because they’re flexible and satisfying. These Hash Brown Breakfast Bowls are perfect for busy weekdays, relaxed weekends, or brunch with family, offering comfort, flavor, and plenty of room for personal touches.

  • 4 cups frozen shredded hash browns

  • 1 tablespoon olive oil

  • 6 large eggs

  • 8 oz beef breakfast sausage

  • 1/2 cup diced onion

  • 1/2 cup diced bell pepper

  • 1 cup shredded cheddar cheese

  • Salt, to taste

  • Black pepper, to taste


Instructions

Heat olive oil in a large skillet over medium-high heat. Add the hash browns in an even layer and let them cook undisturbed for a few minutes to develop a crispy, golden crust. Flip and continue cooking until fully crisp. Season lightly with salt and set aside.

In the same skillet, add the beef sausage and cook until browned, breaking it into small pieces. Add the diced onion and bell pepper, cooking until soft and fragrant.

Whisk the eggs with a pinch of salt and black pepper. Lower the heat and pour the eggs into the skillet with the sausage mixture. Gently stir until the eggs are just set and fluffy.

 

To assemble, divide the crispy hash browns into bowls. Top with the egg and sausage mixture, then sprinkle generously with shredded cheese. Serve warm and enjoy immediately.

Notes

Frozen hash browns work best for convenience, but freshly shredded potatoes can also be used if well dried.
