Honey Lime Chicken with Mango Salsa

  • Author: Ada L.
  • Yield: 4 servings 1x

Description

Some meals are made for warm evenings and backyard dinners—and Honey Lime Chicken with Mango Salsa is exactly that kind of dish. Juicy, marinated chicken grilled to perfection, drizzled with a honey-lime glaze, and topped with a vibrant mango salsa that brings the sunshine right to your plate. It’s sweet, tangy, refreshing, and just a little bit spicy.

The first time I made this dish, it was the height of summer, and the mangoes were ripe, golden, and almost too fragrant to resist slicing straight into. I paired them with red onion, cilantro, and lime, then spooned the salsa over a piece of grilled chicken that had been marinating in honey and lime juice all afternoon. One bite in, and I knew this was going to be a repeat recipe—bursting with flavor, light but satisfying, and easy enough for any night of the week.

Whether you’re firing up the grill for a weekend gathering or just craving something fresh and exciting on a weeknight, this chicken with mango salsa brings big flavor with minimal effort.

Ingredients

Scale
  • For the Honey Lime Chicken:
  • 4 boneless, skinless chicken breasts or thighs
  • 3 tablespoons olive oil
  • Juice and zest of 2 limes
  • 3 tablespoons honey
  • 2 garlic cloves, minced
  • 1 teaspoon chili powder (optional)
  • Salt and black pepper, to taste
  • For the Mango Salsa:
  • 2 ripe mangoes, diced
  • ¼ cup red onion, finely chopped
  • ½ red bell pepper, diced
  • Juice of 1 lime
  • 1 tablespoon fresh cilantro, chopped
  • ½ jalapeño, finely chopped (optional for heat)
  • Pinch of salt

Instructions

  • Step 1: Marinate the Chicken
In a bowl or zip-top bag, mix olive oil, lime juice and zest, honey, garlic, chili powder (if using), salt, and pepper. Add the chicken and toss to coat. Let it marinate in the fridge for at least 30 minutes (up to 8 hours for deeper flavor).
  • Step 2: Make the Mango Salsa
While the chicken marinates, combine the diced mango, red onion, red bell pepper, cilantro, lime juice, jalapeño (if using), and a pinch of salt in a bowl. Toss gently and chill until ready to serve. The flavors develop beautifully after 15–20 minutes.
  • Step 3: Cook the Chicken
Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade and grill for 5–6 minutes per side, or until golden and cooked through (165°F internal temp). Let rest for 5 minutes before slicing.
  • Step 4: Serve and Enjoy
Plate the chicken and generously spoon the mango salsa over the top. Garnish with extra cilantro or a lime wedge, and serve with rice, grilled veggies, or tortillas.

Notes

This dish is naturally gluten-free and dairy-free. You can make it even heartier by serving the chicken and salsa over quinoa, rice bowls, or inside warm tortillas as tacos.
