In every corner panadería across Mexico, a colorful array of sweet breads—pan dulce—welcomes early risers and afternoon wanderers. Among these treasures, the novias stand out, not just for their sugary sparkle but for the sweet nostalgia they stir in the hearts of those who grew up savoring them.
These delightful sugar-crusted rolls, known as novias pan dulce, translate to “brides” in Spanish. Their name evokes a sense of celebration, innocence, and joy, much like the traditional bridal gowns they resemble in their soft white sugar coating. A beloved staple especially in central and southern Mexico, novias are tender, fluffy, and lightly sweet, often enjoyed with a mug of hot chocolate or café de olla on chilly mornings.
For many, biting into a novia is like stepping into the past—a reminder of Sunday mornings spent at grandma’s house, or quick stops at the bakery after school. They’re more than bread; they’re a warm memory baked into soft, pillowy dough.
Ingredients
- 3 ½ cups all-purpose flour
- ¼ cup sugar
- 2 ¼ tsp instant dry yeast
- 1 tsp salt
- 2 large eggs
- ½ cup whole milk, lukewarm
- ¼ cup unsalted butter, softened
- ¼ cup vegetable shortening
- ½ tsp vanilla extract
- ½ cup sugar (for topping)
- 1 Tbsp melted butter (for brushing)
Instructions
- Step 1: Activate the Yeast
In a large bowl, mix the lukewarm milk with a spoonful of sugar and sprinkle in the yeast. Let it sit for 10 minutes until foamy. This ensures your yeast is alive and ready to work. - Step 2: Make the Dough
Add the eggs, the rest of the sugar, salt, vanilla, and about half of the flour. Mix until combined. Then add the butter and shortening, mixing well before incorporating the rest of the flour. Knead the dough on a lightly floured surface for 8–10 minutes until smooth and elastic. - Step 3: First Rise
Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm spot for 1½ to 2 hours, or until doubled in size. - Step 4: Shape the Novias
Punch down the dough gently. Divide it into 10–12 equal portions. Roll each into a smooth ball and place on a parchment-lined baking sheet. Let them rise again for about 45 minutes, or until puffy. - Step 5: Bake
Preheat your oven to 350°F (175°C). Brush the tops with melted butter and bake for 18–20 minutes, or until lightly golden. - Step 6: Add the Sugar Coating
While the rolls are still warm, brush with a little more melted butter and roll generously in sugar. The warmth helps the sugar stick and creates that iconic novia finish.
Notes
You can freeze the shaped, unbaked dough balls for up to 1 month. Thaw overnight in the fridge and allow to rise before baking.
