  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp all-purpose flour (for thickening)
  • 1 tsp dried thyme (optional)
  • Salt and pepper, to taste

Instructions

  • Prepare the Steak:
    Season the steaks generously with salt and pepper on both sides. Let them rest at room temperature for about 10 minutes before cooking.
  • Cook the Steak:
    Heat the olive oil in a large skillet over medium-high heat. Add the steaks and cook for about 4-5 minutes per side (for medium-rare), or longer if you prefer your steak more done. Once cooked to your desired level, remove the steaks from the skillet and set aside to rest.
  • Make the Onion Gravy:
    In the same skillet, reduce the heat to medium and add the butter. Add the sliced onions and cook, stirring occasionally, until they are soft and caramelized, about 8-10 minutes. Add the minced garlic and cook for another 1 minute, until fragrant.
  • Thicken the Gravy:
    Sprinkle the flour over the onions and stir well to coat them. Cook for 1-2 minutes to eliminate the raw flour taste. Slowly pour in the beef broth while stirring constantly to create a smooth gravy. Stir in the Worcestershire sauce and dried thyme, if using. Let the gravy simmer for 3-5 minutes, until it thickens to your desired consistency. Season with salt and pepper to taste.
  • Smother the Steak:
    Once the gravy is ready, return the steaks to the skillet, spooning the onion gravy over the top. Let the steak simmer in the gravy for another 2-3 minutes to absorb the flavors.
