Description

There are desserts that are beautiful, and then there are desserts that tell stories. Polish Carpathian Cream Cake, or Karpatka, is one of those rare confections that does both. With its golden, rugged top and rich, silky filling, this beloved Polish treat was named after the Carpathian Mountains for a reason—the puffy, uneven choux pastry resembles snow-covered peaks rising above clouds of custard cream.

For the Choux Pastry:

  • 1 cup water

  • ½ cup unsalted butter

  • 1 cup all-purpose flour

  • 4 large eggs

  • ¼ teaspoon salt

For the Custard Cream:

  • 2 cups whole milk

  • ½ cup granulated sugar

  • 3 tablespoons cornstarch

  • 2 tablespoons all-purpose flour

  • 4 large egg yolks

  • 1 teaspoon vanilla extract

  • ½ cup unsalted butter, softened

For Dusting:

  • Powdered sugar


Instructions

Step 1: Make the Choux Pastry

Preheat your oven to 400°F (200°C). Grease and line two 9×13-inch baking pans with parchment paper.

In a saucepan over medium heat, bring water, butter, and salt to a boil. Once the butter is melted, add the flour all at once and stir vigorously until the mixture forms a ball and pulls away from the sides.

Remove from heat and let the dough cool for 5–10 minutes. Then, beat in the eggs one at a time, mixing well after each. The dough should become smooth and glossy.

Spread the dough evenly into each prepared pan. Bake for 25–30 minutes until puffed and deeply golden, with jagged peaks. Do not open the oven during baking. Let both layers cool completely.

Step 2: Prepare the Custard Cream

In a saucepan, whisk together the milk, sugar, cornstarch, flour, and egg yolks until smooth. Cook over medium heat, stirring constantly, until thickened—about 6–8 minutes.

Remove from heat and stir in vanilla. Let the custard cool to room temperature, then beat in the softened butter until creamy and light.

Refrigerate for 30 minutes before assembling to firm it up slightly.

Step 3: Assemble the Cake

Place one choux pastry layer on a serving tray, craggy side up. Spread the custard cream evenly over it.

Carefully place the second pastry layer on top, also craggy side up. Press gently to adhere.

 

Chill the assembled cake for at least 2 hours, preferably overnight. Dust generously with powdered sugar before serving.

Notes

You can make both the pastry and custard ahead of time and assemble later. Store components separately and chill well.
