It’s the meeting of two iconic desserts—each beloved in their own right—and when layered with care and baked to creamy, crimson perfection, you get something truly unforgettable: Red Velvet Cheesecake Bliss.

For the Cheesecake Layer:

  • 16 oz cream cheese, softened

  • 1/2 cup granulated sugar

  • 2 teaspoons vanilla extract

  • 2 large eggs

  • 1/3 cup sour cream

  • 1 tablespoon all-purpose flour

For the Red Velvet Cake Layer:

  • 1 1/4 cups all-purpose flour

  • 1 tablespoon cocoa powder (unsweetened)

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup buttermilk

  • 1/2 teaspoon vinegar

  • 1/2 cup vegetable oil

  • 3/4 cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 tablespoon red food coloring

For the Optional Cream Cheese Frosting (Topping):

  • 4 oz cream cheese, softened

  • 2 tablespoons butter, softened

  • 1/2 teaspoon vanilla extract

  • 1 cup powdered sugar


Instructions

Step 1: Prepare the cheesecake layer
Preheat your oven to 325°F (160°C). In a large bowl, beat cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each. Stir in the vanilla, sour cream, and flour until just combined. Set aside.

Step 2: Mix the red velvet batter
In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. In another bowl, combine buttermilk, vinegar, oil, sugar, egg, vanilla, and red food coloring. Slowly add the dry ingredients into the wet, stirring until smooth.

Step 3: Assemble the layers
Grease and line the bottom of a 9-inch springform pan with parchment. Pour the red velvet batter into the pan and smooth it out evenly. Gently spoon the cheesecake layer on top—don’t worry if it seems to sink a bit; it will bake up beautifully.

Step 4: Bake
Place the pan on a baking sheet and bake for 50–60 minutes, or until the center is set and doesn’t jiggle. Let it cool completely, then refrigerate for at least 4 hours, preferably overnight.

Step 5: Optional frosting
For a finishing touch, beat cream cheese, butter, vanilla, and powdered sugar until fluffy. Spread a thin layer over the chilled cake or pipe decorative swirls on top.

 

Step 6: Slice and serve
Run a knife around the edge before releasing the springform. Slice with a sharp knife (wipe between cuts for clean edges) and serve chilled.

Notes

  • This dessert keeps well for up to 5 days in the refrigerator.
  • You can freeze individual slices—just wrap tightly and thaw overnight in the fridge.
