I first made this bowl after one of those long, exhausting winter days when all I craved was something cozy but healthy. It reminded me of the meals my grandmother would put together—never fancy, but always made with care and packed with flavor. The sweet potatoes reminded me of the ones we used to roast in the fireplace after dinner, their sweetness deepened by the heat, their skins crisped to perfection.

 

Now, this bowl has become a staple in our house—especially on busy weekdays or after workouts. It’s a wholesome blend of lean protein, complex carbs, healthy fats, and just the right kick of spice. Whether you’re meal-prepping for the week or needing a fuss-free dinner that satisfies, this is your go-to.

  • For the Beef Mixture:
  • 1 lb (450g) lean ground beef
  • 1 tablespoon olive oil
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili flakes (adjust to heat preference)
  • Salt and black pepper to taste
  • Juice of ½ lime
  • For the Sweet Potatoes:
  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • For the Bowl Assembly:
  • 2 cups cooked quinoa or brown rice
  • 1 cup baby spinach or kale
  • ½ cup corn kernels (fresh, canned, or frozen)
  • ½ cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 2 tablespoons chopped fresh cilantro
  • Optional: lime wedges, hot sauce, pumpkin seeds

Instructions

  • 1. Roast the Sweet Potatoes
    Preheat your oven to 400°F (200°C). In a large bowl, toss the diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread evenly on a baking sheet and roast for 25–30 minutes, flipping halfway through, until golden and fork-tender.
  • 2. Cook the Ground Beef
    Heat olive oil in a large skillet over medium heat. Add chopped red onion and cook for 2–3 minutes until softened. Stir in garlic and cook for another minute. Add the ground beef, breaking it apart with a wooden spoon. Cook until browned, about 6–8 minutes.
  • 3. Spice It Up
    Stir in tomato paste, cumin, smoked paprika, chili flakes, salt, and pepper. Cook for another 2–3 minutes, allowing the flavors to meld. Finish with a squeeze of lime juice for brightness.
  • 4. Prepare the Base
    In your serving bowls, start with a scoop of cooked quinoa or brown rice. Add a handful of baby spinach or kale for a fresh, nutritious crunch.
  • 5. Assemble the Bowl
    Top the grains and greens with a generous spoonful of spicy beef, roasted sweet potatoes, corn, tomatoes, and avocado slices. Sprinkle fresh cilantro over the top and finish with lime wedges or your favorite hot sauce.

Notes

  • This bowl is endlessly adaptable. Add roasted chickpeas for extra crunch, swap rice with cauliflower rice for a low-carb version, or drizzle with tahini-lime sauce for creaminess.
